Guess what? I didn't take any pictures of any Thanksgiving food. At all. I'm fired.
But to make it up to you I did make this leftover pasta frittata this morning! Do you ever have leftover pasta? I always do. Always. And I don't always like to just reheat it as is and eat it like that. Enter the leftover pasta frittata. (I feel like I'm doing an infomercial, haha!) It's suuuuuuuper easy, and it's something you could make for breakfast, lunch, or dinner.
All you need is some leftover pasta, (I don't know exactly how much I had....maybe 4-5 cups) 4 eggs, 1/4 cup parmesan cheese, 1/2 cup mozzarella, salt, and maybe some crushed red pepper flakes.
Ok, the leftover pasta I had just had a basic marinara type sauce, but you could really use anything. In a 10 inch skillet, heat about a tablespoon of olive oil over medium heat. In a bowl, mix together all ingredients. Add the pasta/egg/cheese mixture to the pan, cover. Let it cook til the bottom is a nice golden brown. Now you could either flip it to get the other side, or do like I did and just put in under the broiler. After that, just let it cool for a few minutes then flip it out onto a plate and slice.
This is good hot, warm, or even cold. And it's a good way to use up leftovers.
