Slow Cooker Chicken Taco Soup

This is one of those recipes on AllRecipes.com that has tons of fantastic reviews and that I've had in my recipe box for just about forever. Well, I finally made it for dinner today and just finished eating a bowl of it 10 minutes ago. So good!!! And so easy too since you just throw everything in the slow cooker and let it cook all day. Now that's my kind of meal!
Ok, here's what you need...
1 onion, chopped
1 (16 ounce) can chili beans
1 (15 ounce) can black beans
1 (15 ounce) can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained (I used one 14.5 oz can of fire roasted tomatoes with chili's from Trader Joes)
1 (1.25 ounce) package taco seasoning
3 whole skinless, boneless chicken breasts (I just threw them in frozen)
shredded Cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips (optional)
Just throw everything in the slow cooker (except the cheese, sour cream, or chips) and cook on low for 4-6 hours. That's it! Then top with whatever you want, like cheese, chips, sour cream, or even some avocado would be nice.

Make this! It's the perfect easy meal to make before the big one later on this week ;)

One of my fav meals, although I use another one from Allrecipes. Perfect for these chilly nights we're experiencing!!

Oh, baby! Is this similar to tortilla soup? I'll have to make this one soon!
