Cranberry Walnut Chicken Salad

I started thinking about making this chicken salad last night. I knew I had some left over roasted chicken in the fridge that I needed to use up and thought of what I had on hand (because I really need to go grocery shopping) and I made up this recipe in my head. Then I made it for myself for lunch. I just gotta say...yum. It was good.

So here's what you'll need...

2 cups cooked chicken, chopped
1/2 cup walnuts, chopped
1/2 cups dried cranberries
1/4 cup finely chopped onion
1/4 cup finely chopped dill pickle
1/4 cup mayo
1 tablespoon dijon mustard
1/2 teaspoon salt
pepper to taste (which means none for me)

Mix everything together and make a sandwich!




Yum!! So good with some kettle chips, especially if the chips are on the sandwich. Mmmmhmm.

Ohhh, baby! I made this for supper tonight and it was FANTASTIC!! I followed the recipe to the letter except I added closer to a 1/2 cup of mayo just because I like my chicken and tuna salad more on the moist side. Keep the good recipes coming!
