Chili Lime Potato Breakfast Burritos

I've been on a chili lime kick lately. It's a good combo! So, I was thinking that some chili lime seasoned potatoes would be pretty awesome in a breakfast burrito with some eggs, cheese, and green taco sauce. Yum!

Ok, here's what you'll need:

3 potatoes (I used 2 russets and 1 sweet potato), diced
olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon chili powder
2 tablespoons lime juice

Preheat oven to 425 degrees. Put diced potatoes on a baking sheet and drizzle generously with olive oil. Sprinkle with salt, garlic powder, chili powder, and lime juice. Toss potatoes to coat evenly. Roast for about 15-20 minutes, or until tender and a little crispy.

Put in a burrito sized tortilla and top with some eggs, cheese, and favorite salsa.




These were tasty! My husband liked them without the sweet potato, but I kinda liked the sweetness it gave with all the seasoning. These would be great with some sausage also, for those that need to put some meat in there!
