Happy Cinco de Mayo! Honestly, I have no idea what Cinco de Mayo is about. If you want to leave me a comment telling me how I'm an uneducated idiot, go right ahead. What I do know is that a lot of people eat Mexican food today and I can dig that. Any day that gives me an excuse to make any sort of food is all good for me.
So, I decided to go ahead and make some chicken taco filling in the ol' crock pot! I just made it up with stuff I had on hand. And I kinda threw stuff in there so my measurements are approximate. It'll be ok though, I promise.
Ok, here's what you'll need...
4 chicken breasts (I just threw them in frozen)
1/4 cup lime juice
1 tablespoon chili powder
2 teaspoons garlic powder
1 teaspoon cumin
1/4 cup green taco sauce
1 tablespoon dried minced onion
1 teaspoon brown sugar
salt and pepper
Throw all ingredients in the slow cooker and cook on low for 4-6 hours. Once the chickens fully cooked, shred and return to sauce for at least another half hour.
You can use this in soft tacos like I did with whatever toppings you want, or make some fantastic burritos or enchiladas! Or just eat it by itself right out of the crock pot...I like to do stuff like that.
Yum yum yum!! So good!
Anyway, I also wanted to make a nice dessert to go with out little mexican meal so I decided to make a flan. I have never had flan before and I really wanted to try it. Sadly, my flan...was a flop. I don't know what happened but it looked horrible.
You better believe I ate it. The taste really wasn't bad. The texture was off though and my older boy said it tasted like eggs in barf. That was a little harsh. Oh well, try, try again. I don't know if I will though.
Anyway, hope everyone had some mexican food to celebrate whatever today is about! I'm going to go eat the rest of my flan.

It probably wasn't that you did anything wrong with the flan. I can't stand flan BECAUSE of the texture. It's awful and I'm not even a texture person. You can give it another go but you just may be like a lot of people in the world who can't stand the flan texture. **Not to put down people who love flan...just an opinion**
We went to the zoo for Cinco de Mayo!! And, I have no idea what Cinco de Mayo is actually to celebrate either, and hell, I worked in a Mexican restaurant for years that celebrated it! All I know is that "cinco de Mayo" means, "the fifth of May." haha!! Oh! And we went to Garcia's! (see, at least you attempted to MAKE all your Mexican food, I let other people do it for me!!)
Oh, and flan is pretty gross no matter who makes it, so don't feel bad that yours didn't turn out and that he didn't like the taste of it. I don't know many people that like flan, and I don't think any children, except for hispanic children, like flan. So if he doesn't like it next time, don't think its you. Its gonna be flan in general. :)
