Parmesan Artichoke Chicken Salad

Why, Hello! How have you been? Sorry I've been kinda...gone. I've actually been pretty busy. The boys are off of school for the summer now, and I got a part time job doing hair! So yeah, busy busy.

I made this chicken salad probably a month ago and now I'm finally getting it on here! I just made it up to use up some leftover roasted chicken, much like this other chicken salad, and it turned out delicious!!

Ok, lets get to it! You'll need:

2 cups cooked chicken, chopped
1 cup marinated artichoke hearts, chopped
2 green onions, chopped
1/3 cup parmesan cheese
1/4 cup mayo
1 tablespoon dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt

Mix it all together and enjoy! I loved this with some parmesan crisps from Trader Joes...yum yum!
