Lemon Nut Balls

Lemon Nut Balls. Hehehe. Sorry, I'm a child. But the name makes me giggle! Anyway, sorry I've been MIA for a while! I've been working and then pretty much just sitting around because it's so effin' hot! It got to like 107 degrees a couple weeks ago! And you know how I hate summer, especially when it's so miserably hot. This week hasn't been too bad, but next week's supposed to be another scorcher! Ugh. That being said, I'll try to get back here more often. Are any of you even still out there? Hello...hello...echo...echo.........

Alright, I made these lemon nut balls..hehe...a couple weeks ago for a little treat when it was pretty hot out. I found the recipe on Allrecipes. The great thing is that these require no baking and they're lemon so they are quite refreshing! Also, they're super easy.

So, here's what you'll need...

• 1/2 cup butter, melted
• 1/4 cup lemon juice
• 5 cups confectioners' sugar
• 3/4 cup nonfat dry milk powder
• 1 cup finely chopped pecans (I used walnuts)

• In a large mixing bowl, combine the butter and lemon juice. Combine confectioners' sugar and milk powder; gradually add to butter mixture, beating until smooth. Refrigerate for 1 hour. Shape into 1-in. balls; roll in nuts. Store in the refrigerator.

I really, really enjoyed these! They're reminiscent of lemon bars, which I love. They have a light lemon flavor though, so if you want that to be a little more intense I'd maybe add some lemon zest. I'm sure I'll be making these quite a bit this summer when I need a little refreshing treat.
